No-Bake Pistachio Cheesecake (No Refined Sugar)

Base Layer (Makes enough for 4 jars)
Ingredients:
- 1 cup seedless dates (approx. 150g)
- 1 tbsp pistachio flour (approx. 7g)
- 1 tbsp pistachio butter (approx. 16g)
- 1–2 tbsp milk of choice (only if mixture is too thick)
Instructions:
- Add dates, pistachio flour, and pistachio butter into a blender or food processor.
- Blend until the mixture sticks together like a soft dough. Add a small splash of milk if it’s too thick.
- Press the mixture evenly into the bottom of 4 small jars.
Cheesecake Filling
Ingredients:
- 2 cups cottage cheese (approx. 450g)
- 1 cup cream cheese (optional, for a richer texture – approx. 225g)
- 1 tbsp pistachio butter (approx. 16g)
- 2–3 tbsp honey or maple syrup, or 2 tbsp pistachio cream for sweetness
- 1–2 tbsp milk of choice (only if needed for blending)
Instructions:
- Add cottage cheese, cream cheese (if using), pistachio butter, and your sweetener of choice into a blender.
- Blend until smooth and creamy. Add milk a tablespoon at a time if it’s too thick to blend.
- Spoon the filling over the date base in your jars and smooth the top.
Topping Ideas (Optional but recommended!)
- 1–2 tsp pistachio cream or pistachio butter drizzled on top
- A pinch of crushed pistachios for garnish
